Sorry about my mini-hiatus yesterday. Brendan ended up with a snow day, so we spent the day hanging out, going to the gym, and making pierogies (recipe forthcoming). Anyway, it was nice to have an unexpected day off, especially after my busy weekend. You see, on Saturday I provided desserts for a fundraiser. More than just a batch or two of brownies for a bake sale, I fed 120 people cupcakes, cheesecakes, and cookies. It was a lot of fun, but a lot of work. People raved about the peanut butter cookies, cranberry cookies, and chocolate cupcakes. However, I think the winner was the bite-sized blueberry cheesecakes.
I know, I know. A good food blogger would have shared these with you before Valentine’s Day. But had I done that, my husband would have known about them! And everyone loves surprises, so just forgive me on this one, okay? I promise, they’ll taste just as good if you make them this week as they would have last week. Plus, you don’t have to share them with your Valentine this way. So really, I’m doing you a favor!
Recently, my friend and I decided to have a girls’ night. Our theme: cupcakes and cocktails. Because, really, what’s more fun than eating an individual cake accompanied by some girly drinks, all while watching a chick flick in yoga pants and dancing around the kitchen to Taylor Swift? The answer, of course, is nothing. As far as a girls’ night goes, that’s pretty much the best way for it to happen.
I don’t think I’ve mentioned it before, but in my house we are huge fans of the University of Delaware. It’s where my husband and I met. All four of our parents attended the school. Both of our sisters were Blue Hens. Thus, it’s easy to say it’s a family affair. More than just liking the school, though, we are avid UD football fans. We have season tickets and go to all the games. And although some people believe the game itself is the impetus, for me it has to be the tailgating. Getting to the parking lot four hours before kickoff and setting out an elaborate feast, rain or shine, has be my favorite part of football season (I must say I prefer shine).
