Yesterday, I got to celebrate with one of my best friends at her bridal shower.  We had a tea party, and because her sisters are far craftier than I will ever be, it seriously looked like something off of Pinterest.  There were finger sandwiches, and mismatched China sets, and individual tiered wedding cakes for each guest, decorated with babies breath all around.  Seriously, Pinterest would have been jealous.

Sorry about my mini-hiatus yesterday.  Brendan ended up with a snow day, so we spent the day hanging out, going to the gym, and making pierogies (recipe forthcoming).  Anyway, it was nice to have an unexpected day off, especially after my busy weekend.  You see, on Saturday I provided desserts for a fundraiser.  More than just a batch or two of brownies for a bake sale, I fed 120 people cupcakes, cheesecakes, and cookies.  It was a lot of fun, but a lot of work.  People raved about the peanut butter cookies, cranberry cookies, and chocolate cupcakes.  However, I think the winner was the bite-sized blueberry cheesecakes.

Do you have an opinion on oatmeal raisin cookies?  I feel like they are one of those foods like cilantro or olives: you either love them or you hate them.  I could be wrong about that, I suppose, but I grew up in an oatmeal raisin hating household.  My mom’s mindset was that it was a cruel twist on a chocolate chip cookie.  And I can see her point; biting into an oatmeal raisin cookie when you’re expecting chocolate chip has to be the foundation of many a trust issue.  But I digress.

Happy Apple Fritter Day, everyone!  Yes, apple fritter day.  Now, I know most people will argue with me.  “Today is pancake day,” they’ll say.  But those people are wrong.  For my whole life…and my mom’s whole life…and my Grandma’s whole life…and I think for the lives of the women in my family for generations, Mardi Gras has been a day when we fry up apple fritters.  My mom tells the story of when she was a kid, and her grandmother would get her after school and make these for an after school snack, and then again when the rest of the family came over after dinner.  Of course, my great grandmother didn’t have a recipe for them; she would just throw the ingredients together and fry them up.  My mom took the time to to watch her make these, taking notes, and finally put the recipe together.  And I’m here to share it with you.

Last weekend, my husband and I were sitting around over morning coffee talking about the upcoming week.  Nonchalantly, he mentioned, “It’s my half-birthday, you know.”  I sort of shrugged my shoulders.  “Ok…”  “You should bake me a cake!”  This garnered some raised eyebrows.  We aren’t talking about a six year old here…this is my 6’4″, grown-ass man husband.  When I reminded him of this, he sort of gave me puppy dog eyes.  “But my half-birthday!  And cake!”  I flatly responded, “You are a dork.”  To which he answered, “Yes, but you love me.”  Touche, my friend.

I love Girl Scout Cookies.  Honestly, who doesn’t?  My freshman year of college, my little cousin was just a Daisy and I received a care package with a few boxes of cookies.  Oh, it was wonderful!  A day or two after receiving that package, my now-husband (then, just a guy on my dorm floor I’d hung out with a time or two) invited me to a movie night with some of his friends.  I went, and being the considerate person I am, I brought a couple boxes of cookies with me.  We had a nice time that night, but the guys had ordered pizza and we didn’t break into my cookies.  Movie night went late (like 2 AM late), so I went back to my room that night exhausted.  The next afternoon, I stopped by Brendan’s room hoping to get my cookies back.  He and his roommate looked at me sheepishly…they had eaten them.  All of them.  In the twelve hours I had been gone, these boys polished off my Tagalongs and Thin Mints!  The fact that these people became my husband and some of my best friends speaks volumes to how forgiving I am…

Recently, my friend and I decided to have a girls’ night.  Our theme: cupcakes and cocktails.  Because, really, what’s more fun than eating an individual cake accompanied by some girly drinks, all while watching a chick flick in yoga pants and dancing around the kitchen to Taylor Swift?  The answer, of course, is nothing.  As far as a girls’ night goes, that’s pretty much the best way for it to happen.

Do you know what today is?  The College Football Championships!!  And my Ohio State Buckeyes are in it!  I’ve repeatedly mentioned my enthusiasm for the Fightin’ Blue Hens, but I tend not to be as vocal about my OSU love.  That’s probably because I live in Delaware, and have never been to the Shoe.  I did go to Ohio State for grad school, though, and am sincere in my Buckeye pride.
