I don’t know about you guys, but my household is getting VERY excited about the Super Bowl.  Despite deflate-gate, my die-hard Patriots fan hubby is pumped.  Me, I couldn’t really care less about the game itself, especially now that I’ve been subjected to press conferences by both Tom Brady and Bill Belichick discussing their balls.  However, the Super Bowl comes with two wonderful things: fantastic junk food, and creative commercials.  So, in gearing up for Sunday, this week is going to feature all sorts of football food recipes!

First up is this Thai Chicken Pizza with Honey Sriracha Crust.  It all started with a Pizza Hut ad.  The boy saw the commercial detailing their honey sriracha crust and he became obsessed, insisting that we make one ourselves.  I certainly wasn’t against the idea — I love sriracha — but what would go on the pizza?  A plain cheese pizza sounds kind of gross with it…bbq might work, but I still wasn’t sure.  And then it hit me: Thai chicken!

I used my go-to pizza crust recipe, but topped it with a peanut sauce and Thai marinated chicken.  Oh my goodness, this was delicious.  It had a perfect balance of sweet and spicy.  Although there is sriracha in literally every layer of this recipe, the flavor is still so multidimensional.  The chicken has a subtle tang to it, and the creamy mouth feel of the the peanut sauce is luscious.  And the crust is so good; there’s a sneaking heat that creeps up as you eat it, but at no point were we searching for something to quell the burn.

My sister and hubby topped their portion with Mexi-blend cheese (“If there’s no cheese it’s a flat bread, not a pizza!”), but I left mine naked.  I have to admit, I was pretty ambivalent about how cheese would go with peanut butter…or soy sauce…or sriracha.  They enjoyed it with the cheese, I enjoyed it plain, so it’s really up to you I suppose.  Either way, though, flat bread or pizza, this is a really tasty spin on classic football food!

Thai Chicken Pizza with Honey Sriracha Crust

Makes 2 12” Pizzas

Ingredients

For the Crust

For the Chicken

  • 1 lb boneless, skinless chicken breast pieces
  • 2 tbsp chile sauce
  • ½ tsp sriracha
  • 1 tbsp gluten free tamari
  • 1 tbsp lemon juice
  • ½ cup vegetable oil
  • ½ tsp garlic powder
  • 1 tsp dried basil
  • 1 tsp dried cilantro

  • ½ cup creamy peanut butter
  • ¼ cup hot water
  • 1 tbsp brown sugar
  • 1 tbsp sriracha
  • 1 tbsp tamari
  • 1 tbsp rice vinegar
  • 1 tbsp lemon juice
  • ¼ tsp garlic powder

Directions

  1. For the chicken: Whisk together chile sauce, sriracha, tamari, lemon juice, oil, garlic, basil, and cilantro. Pour over chicken, and marinate for at least ½ an hour, up to an hour. Sauté on the oven over medium heat, and set aside.
  2. For the sauce: Whisk together all ingredients.
  3. Prepare crust as instructed. Combine sriracha with honey, and brush edges of crust with the mixture. Par-bake the crust on either a pizza oven for about 3 minutes, or in the oven.
  4. Spread the sauce over the par-baked crust, and top with the cooked chicken (and optional Mexican blend cheese). Cook on a pizza oven for 6-7 minutes, or in an oven, until the crust is golden.
  5. Serve hot and enjoy.
